Shopska Salad  brief history
To Bulgarians a Shopska salad takes proper preparation requires nothing less than true care and devotion to this master.  Born in 1970 in a small cafe bar in the centre of Sofia, the Shopska Salad soon became very popular and quickly became a national signature dish. To the extent that nowadays there is no Bulgarian who could imagine his summer without one.
The dish is so popular in fact it out stages most other salads in more traditional restaurants.

Items to look out for on the menu
Tarator Soup  
This is a very refreshing yogurt soup made with cucumber, dill, nuts, oil and garlic served cold very nice on a summers day. 
Ayran  
A traditional local drink made from yogurt, salt and water refreshing drink served chilled during the summers.  

  Kavararma ...A delicious slow-cooked stew of pork and liver. 
 Kavarma is the countries national dish

Drob Surma....  a dish of chopped liver, rice and eggs baked in the oven.

Sirene po shopski.... made from eggs and cheese baked in a clay pot with tomatoes.

Mish Mash ....  traditional Bulgarian Omelette 

Katak Krotmach ka´tək krut´mach.... a dairy product with salty-sour taste.

Rhodopean dish Kiln.... a deliciously warm and a filling meal, a rice dish served hot with a side portion of Bulgarian Yoghurt

Shishche.... Pork, Lamb or beef kebabs are a regular sight at a Bulgarian table along with salad.

Rakia....  Bulgarian spirit served with a starter of salad
